Cherry Coconut Bars Recipe

I love baking up some delicious treats for my family and this is one of their favorite recipes. It is also one that I like to make for various school bake sales at my daughter's high school. They are always a big bake sale seller! Everyone loves them!

1 cup all purpose flour
1/2 cup butter, softened
3 Tbsp. confectioners sugar
2 large eggs, lightly beaten
1 cup granulated sugar
1/4 cup all purpose flour
1/2 tsp. baking powder
1/4 tsp. salt
1 tsp. vanilla extract
3/4 cup chopped nuts
1/2 cup flaked or shredded coconut
1/2 cup quartered maraschino cherries

Heat oven to 350 degrees. Using your hands, mix 1 cup of flour, butter and confectioners sugar together in a large bowl until smooth. Spread thin with fingers into a square 8x8" baking pan. Bake about 25 minutes. Stir all remaining ingredients into eggs in the bowl. Spread this mixture over the baked base mixture. Bake for another 20-25 minutes. Cool. Cut into bars after cooling and store bars in an airtight container.
