Pennsylvania Dutch Shoo-Fly Cake Recipe

Here in Pennsylvania a very popular dessert is called Shoo-Fly Cake. I often meet people who are not from our area who have never heard of it! The Pennsylvania Amish People are known for making fabulous Shoo-Fly Cakes & Pies. Just about every where you go in Lancaster County to dine, you will find either Shoo-Fly Cake or Shoo-Fly Pie on the dessert menu.

Shoo-Fly Cake Recipe

1 cup molasses
2 1/4 cups boiling water
1 Tbsp. baking soda
4 cups all purpose flour
3/4 cup vegetale shortening
1/2 tsp. salt
1 lb. brown sugar

Mix molasses, boiling water and baking soda together in a small bowl and set aside. Mix the flour, shortening, salt and brown sugar together with a fork or pastry blender until crumbs form. Remove and Reserve 1 cup of crumbs to be used as the cake topping. Mix the rest of the ingredients together (crumbs and liquid). Pour into a 13 x 9" ungreased baking pan. Bake at 350 degrees for 40-45 minutes. Remove from oven and top with the remaining reserved crumbs. Let cool and serve with Cool Whip if desired.
