Amish Chicken Noodle Soup Recipe

I live right outside of Lancaster County, PA and the Amish are known for being fantastic cooks and bakers! We often go down to the farmers market and buy produce from them. Several years ago a very nice Amish woman gave me this recipe for Amish Chicken Noodle Soup. Its very easy to make and tastes fantastic! Make sure that the apple you select is ripe and very tart! Enjoy!

Amish Chicken Noodle Soup Recipe

3 lb. chicken
2 qts. water
2 tsp. salt
1 1/2 cups chicken broth
2 cups celery, chopped
2 cups carrots, chopped
1 tart apple, chopped
1 cup onions, chopped
dash of ground black pepper
4 cups egg noodles

Place chicken in kettle with 2 qts of water, cover and cook until tender. Remove chicken from kettle and strain broth. Debone chicken and return to kettle with strained broth. Add chicken stock, celery, carrots, apple, onions, peppers and salt. Cook until veggies are tender. Add noodles and cook 8-10 minutes.
