Apples And Red Cabbage Recipe

Here is a delicious recipe that utilizes cabbage, apples and onions...which is great if you plant a garden and want to use up some of your harvest. We like to hit the local Farmer's market in the Fall and buy up their clearance cabbage and apples and make it for the family.

If you don't want to make this on the stove top, you can certainly toss everything together in a slow cooker and simmer on the low setting for several hours.

Apples and Red Cabbage Recipe

1 large red cabbage
2 large tart apples, diced
1/2 medium onion, diced
1/2 tsp. salt
1 tsp. granulated sugar
1 tbsp. lemon juice
2 tbsp. vinegar
1 tsp. all purpose flour
2 tbsp. vegetable shortening
1 cup cool tap water
1/2 teaspoon ground black pepper

Wash and shred the red cabbage. Heat vegetable shortening and add cabbage and onion. Stir to coat cabbage and onion thoroughly with shortening, add apples, salt and water. Cook over low heat for 30 minutes. Add and stir in lemon juice, granulate sugar, all purpose flour, vinegar and ground black pepper. Continue cooking for additional 15 minutes.
