I love clam chowder soup especially if it's homemade and when I make this soup for my family this is the recipe I like to use. You can make this up a day ahead of time and just reheat the following day. It keeps well in the refrigerator for a day or two.
New England Clam Chowder Recipe
6 potatoes, diced
4-6 carrots, diced
1/2 c. onion, chopped
1/2 c. butter
1 1/2 c. water
1 bottle clam juice (optional)
2 (6 1/2 oz.) cans clams
Drain juice in pot and set clams aside. Cook for 15 minutes over med. heat until veggies are tender. Then add:
Reserved Clams
2 cans cream of mushroom soup
2 (12 oz) cans evaporated milk
1 tsp. celery salt
1/2 tsp. pepper
Cook for 15 minutes and then serve with your favorite crackers on the side.
