Pineapple Buttermilk Muffins Recipe


Several years ago I got this recipe out of one of the many vintage cookbooks that I own. I tweaked it a little bit to bring it into modern times and it is one that I enjoy making often for my family. We really like having them during the fall and holiday seasons.

Pineapple Buttermilk Muffins Recipe

3 strips bacon
1 cup sifted all-purpose flour
1 tsp. baking powder
3/4 tsp. baking soda
3/4 tsp. salt
1 cup cornmeal
1/2 cup crushed pineapples, drained
2 large eggs
1 1/2 cup fresh buttermilk
2 tbsp. brown sugar
1/4 c. bacon drippings

Heat oven to 425 degrees. Grease muffin tins. Fry bacon until crisp. Sift flour, baking powder, baking soda and salt into a mixing bowl. Add cornmeal and pineapple. Put the eggs, buttermilk, sugar and drippings into a blender, cover and mix until smooth. Pour into flour mixture and stir only until flour is moistened. Fill prepared muffin tins 2/3 full. Crumble crisp bacon on top of each muffin. Bake for 15-20 mins or until done. Makes 12.

You can omit the crumbled bacon on top of the muffins if you want, that's entirely up to you.

I love cornmeal, so these muffins look very interesting. How does the bacon taste mix with the pineapple?

Bacon with Pineapple? Sounds really interesting! I would definitely want to make these one day...I love the combo of salty and sweet.

Thanks for the comment. Your blog is wonderful and a nice partner for your Tupperware.I imagine bacon with pineapple is really good. I love this sandwhich called toast Hawaii wioth ham and pineapple. It works!
