Delicious Buttercream Frosting Recipe

My husband loves anything made with butter cream! (especially frosting and those yummy buttercream filled Easter eggs). I made some cupcakes (white cake mix) 2 weeks ago and used the below butter cream frosting recipe. This is a sweet frosting, so you don't want to lay it onto the cupcakes super thick, at least in my opinion. With that said, it's extremely good and our cupcakes didn't last long before the family had them entirely gone!

Butter cream Frosting Recipe

16 oz. marshmallow cream
1 1/2 cups (3 sticks) butter, softened
5 tsp. fresh lemon juice
1 tsp. vanilla extract
1/2 cup confectioners 10X sugar

In a medium sized mixing bowl, beat the marshmallow cream using an electric mixer set on low speed. Add the softened butter in 1" pieces and beat until smooth. Add the lemon juice, vanilla extract and confectioners sugar, scraping down the sides of the bowl to make sure everything gets mixed evenly. Beat on medium speed until smooth and fluffy. Frost your cake or cupcakes immediately.

Yummy! Those cupcakes sure look good. :)

I'm tempted to make some now...but I better not, trying to lose some more weight.

Oh I am going to have to try this buttercream recipe. I never did it but I love to bake. The kids love that kind of icing too. (hubby not. he's a coolwhip guy)
