Chocolate Oatmeal No Bake Cookies Recipe

This is one of my family's favorite cookie recipes and I seem to make a lot of them in the summer time when I don't want to heat up my house by using the oven. These are stove-top cookies and really easy to make. A great recipe for older children to help you with in the kitchen.

Chocolate Oatmeal No Bake Cookies Recipe

2 cups granulated sugar
1/2 cup cocoa powder
1/4 cup margarine, softened or butter
pinch of salt
1/2 cup milk
3 cups quick oats (oatmeal)
1 cup creamy peanut butter
1 tsp. vanilla extract

Combine the first 5 ingredients in a large pan and boil for 1 minute, stirring often. (I find it best to use my Tupperware Silicone Spatula so the chocolate doesn't stick to it).

Turn off the heat and stir in the oatmeal, peanut butter and vanilla. Drop by the tablespoonful onto wax paper. Let them cool and they will harden as they cool. Store in an air tight container.
