Baked Apricot Cookies Recipe

This recipe for apricot cookies utilizes dried apricots which can be found at your local supermarket. My great auntie used to make these homemade apricot cookies all of the time and the family loved them! You can use regular or light brown sugar when you make this recipe.

Apricot Cookies Recipe

1 cup butter flavor shortening
1/2 cup granulated sugar
1/2 cup brown sugar
2 large eggs
1 tsp. vanilla extract
2 cups all-purpose flour
1 tsp. baking soda
1/2 tsp. salt
2 cups dried apricots, chopped

Combine shortening and sugars in large bowl. Beat with mixer until well blended. Beat in eggs and vanilla until well blended. Combine flour, baking soda and salt in med. bowl. Add to creamed mixture, mix well. Mix in apricots. Drop dough by tbsp. onto ungreased cookie sheets. Bake at 350 degrees for 10-12 mins or until done.
