Dijon Roasted Potatoes Recipe

When it comes to making this recipe, we like to use red potatoes, but if you don't have any, you can certainly substitute white potatoes. If you don't enjoy the taste of garlic, you can omit the minced garlic. If desired, you can add salt and pepper to taste.

If you have picky eaters at your home, try this potato recipe, my nephews who are 9 and 11 love it...so hopefully your children will too!

Dijon Roasted Potatoes Recipe

1/3 cup Dijon Mustard
2 tablespoons olive oil
1 clove garlic, minced
1/2 teaspoon Italian seasoning
6 medium red potatoes, cut into chunks

Mix all ingredients except potatoes in a bowl. Place potatoes in greased baking pan. Pour mustard mixture over potatoes, toss to coat. Bake at 425 degrees for 35-40 minutes or until potatoes are fork tender, stirring occasionally. If desired, add salt and pepper to taste.

I love garlic and I've never made roasted potatoes with dijon before so I will be trying this one.

I'm always looking for new ideas with potatoes that are not fried. Would a spicy honey mustard work instead of dijon?
