Easy Soft and Chewy Banana Bread Cookies


I didn't have time to bake some homemade banana cookies from scratch for my hubby to take to work in his lunch so I cheated and purchased one of those boxed banana bread mixes. I mixed up the batter according to the box directions and instead of pouring the batter into my loaf pan, I dropped it onto a baking sheet in large spoonfuls and made large chewy banana bread cookies. (aka cookie shaped mini banana bread).

I was pleasantly surprised at how well this worked out. They were soft, chewy and very moist :) If I ever do it again, I think I will throw in a cup of chocolate morsels since we enjoy chocolate with our banana flavored baked goods.
