Crock Pot - Beef Roast and Potatoes Recipe

A few days ago my hubby asked me to make him a beef roast with some whole potatoes in the crock pot so I was more than happy to make him one of his favorite meals. Besides...I love using my crock pot as it makes the best dinner style meals for my family.

Crock Pot Beef Roast and Potatoes

2 1/2 lb. beef roast
8 to 10 small whole white potatoes, cut in half
1/2 cup chopped carrots
1/4 cup chopped celery
1/4 cup chopped onion
4 beef bouillon cubes or 1 cup beef broth/stock
2 teaspoons parsley
salt and ground black pepper to taste

Place your roast into the crock pot and cover with water. Turn the setting up to high and cook for 1 hour on high. Wash and cut your small whole potatoes in half, leaving the skins on. Place bouillon cubes or beef broth into crock pot and then add all of your veggies, salt, pepper and parsley.

You can cook the roast on high for 3 additional hours or turn the setting down to low and cook for 6 hours.

This looks absolutely delicious and hearty. I'm sure it was especially good with all the snowfall you had.

I should invest in a crockpot.
