Delicious Homemade Vanilla Pudding Recipe

My husband is a huge fan of homemade pudding and I don't mind making it for him as long as I have easy recipes on hand. When it comes to making homemade vanilla pudding, this is the recipe that he likes the most...he says it has the perfect blend of vanilla and the pudding is rich, smooth and creamy...just the way he likes it. This recipe will make 4 servings.

Vanilla Pudding Recipe

2 1/2 tablespoons cornstarch
1/2 cup granulated sugar
1/4 teaspoon salt
2 large eggs
2 cups of milk (we use 2% milk)
1 tablespoon unsalted butter, softened
1 1/2 teaspoons vanilla extract

In a small bowl, combine the cornstarch, 2 tablespoons of granulated sugar and the salt. In a separate bowl, whisk the eggs until smooth and then whisk in the 2 1/2 tablespoons of cornstarch. Combine the milk and remaining granulated sugar in a medium sized saucepan. Bring this mixture to a boil over medium heat stirring often with a silicone nonstick spatula. Once it has come to a boil, slowly pour the milk into the egg mixture and whisk for 1 minute. Return the mixture back to the pan over medium heat. Bring to a boil again, stirring constantly until the mixture has thickened (takes about 3 minutes). Remove from heat and transfer the mixture to a medium sized bowl. Whisk in the butter and vanilla extract until its well combined. Cover the bowl and chill in the refrigerator for 3-4 hours so that it sets.
