Delicous Double Crust Blueberry Pie Recipe

One of my all time favorite pies to make happens to be blueberry! My hubby is a cherry pie lover and I am the blueberry. The following recipe is the one I like to make as it has a double crust (bottom and top crust). You can either make a homemade crust or purchase a double pie crust at your local store.

Blueberry Pie Recipe

1 cup granulated sugar
1/4 cup all purpose flour
dash of salt
1 (20 ounce) bag of frozen blueberries (unsweetened and thawed)
2 teaspoons of lemon juice
1 tablespoon butter, softened
Pie Crust (homemade or store bought)

In a large mixing bowl, combine the sugar, flour and salt. Toss the thawed blueberries into the sugar mixture and lightly mix together, being careful to not crush the berries. Spoon mixture into an unbaked pie shell. Sprinkle the top with lemon juice and dots of butter. Add your top crust and flute the edges. I like to cut an X through the top crust to allow steam to escape during the baking process.

Bake in a 350 degree oven for 30-40 minutes or until done. If your crust starts getting too brown, you can cover it with some foil.

This pie didn't last too long after it was baked as my family absolutely loved it!

I haven't met too many pies that I don't like, but this blueberry looks yummy Shelly!

I love blueberry pies. I especially like this recipe because it calls for frozen blueberries when most recipes call for fresh. Getting enough fresh blueberries in Hawaii to make a pie can be very expensive!
