Friendship Cake - Brandied Fruit Cake Recipe

Like to cook and bake? Well...of course you do otherwise you wouldn't be reading my blog! Today I am sharing with you all a recipe that a guest blogger gave to me to share with all of you.

Have you ever had a friendship cake? The name comes from the starter sets being given to friends to make their own cakes, thus Friendship Cake. Each batch of fruit will make 3 cakes and 3 starter sets, 1 for yourself and 2 to give to friends. If you don't have a starter set you can make this blend and start your own! The cake is nice and moist and full of fruit and I like it with a little butter spread on it.

Brandied Fruit Cake - Friendship Cake Recipe

Use glass container to brandy fruit. DO NOT put lid on tight! It must breathe.
Stir with a wooden spoon. You will have enough starter juice to pass on to 2 to 3 people and keep one yourself.

Instructions and Ingredients

1 1/2 cups starter juice
2 1/2 cups sugar
1 qt. Sliced peaches with juice
Stir daily for 10 days.

On the 10th day add
2 1/2 cups sugar
1 pt. Can pineapple chunks with juice
Stir for 10 days.

On the 20th day add
2 - 9oz. jars maraschino cherries (Drained)
Stir for 10 more days
on 30th day BAKE CAKE!

1 1/2 cups of the Brandied fruit drained
1 box yellow cake mix
2/3 cup vegetable oil
4 eggs
1 cup walnuts
1 small box French Vanilla instant pudding mix

Combine all ingredients, mix and bake in greased and floured Tube or Bundt pan.
Bake at 325 degrees for 1 hour.

I've had a friendship cake, but it didn't have fruite in it. This looks delicious!
