Mustard Glazed Chicken Breasts Recipe

A few years ago, one of my friends gave me this recipe to make mustard glazed chicken breasts and let me tell you...it quickly became a favorite here at our home. This delicious dinner recipe will make 4 servings.

Mustard Glazed Chicken Breasts

4 boneless chicken breasts, skin on
2 tablespoons olive oil, plus a little bit more
salt and black pepper to taste
4 tablespoons butter, softened
2 1/2 tablespoons Dijon mustard
3/4 cup bread crumbs
2 tablespoons fresh thyme, chopped
3/4 cup canned chicken broth (we use low salt broth)
1/2 cup heavy whipping cream

Preheat your oven to 350 degrees. Rub chicken breasts with olive oil and season with salt and pepper to taste. If you are on a low-salt diet, omit the salt. Combine 2 tablespoons of butter with the dijon mustard, reserve 2 teaspoons for sauce. Melt the remaining 2 tablespoons of butter, mix with the bread crumbs and chopped thyme.

In a large frying pan, heat the olive oil over medium heat. Sear the chicken until crispy. Remove from heat. Spread the Dijon mustard mixture over the chicken and sprinkle the bread crumbs on top. You will want to do this to both sides of the chicken breast. Place the chicken in your preheated oven and roast the chicken until it has been completely cooked, about 30-40 minutes. Transfer chicken to platter. In your frying pan, combine the chicken broth with the whipping cream over medium heat, stirring constantly for 3-4 minutes. It should become thick and creamy. Once it is done, remove from heat and stir in the remaining Dijon mustard mixture. Serve this sauce over your chicken breasts.
