Parsley Herbed Red Potatoes Side Dish Recipe

I made this fabulous recipe a few days ago and my family just loved it. The best part is that it only requires a few ingredients, its easy to prepare and works up quickly.

Parsley Herbed Red Potatoes Recipe

10 small red potatoes
4-5 teaspoons of butter
2 1/2 teaspoons dried parsley
2 teaspoons dried chives

Wash your potatoes and cut in half or quarters depending on their size. Place potatoes into a large pot of warm water and bring to a rapid boil. Turn down the heat to medium and cook over medium heat until the potatoes are fork tender. Be very careful to not overcook them or they will fall a part and be mushy. Once they are tender, drain water. In a glass measuring cup combine the butter, parsley and chives and microwave on high for 30 seconds or until hot and the better has melted. Gently toss the butter mixture with the potatoes and serve immediately.
