How To Make Peach Rhubarb Freezer Jam With Recipe

During the summer months I love to spend time in my kitchen making a variety of freezer jams for my family. This recipe is really easy to make and tastes delicious. It will make approximate 7 half-pints of jam.

Peach Rhubarb Freezer Jam Recipe

2 quarts of freshly sliced rhubarb (sliced into 1" pieces)
4 cups granulated sugar
1 (21 ounce) can peach pie filling
1 small box orange gelatin mix

In a large mixing bowl, combine the sliced rhubarb with the granulated sugar. Cover and let stand over night. Pour this mixture into a large stock pot and bring to a boil over medium-high heat. Once it reaches a boil, reduce heat to low and simmer for approximately 10 minutes. While your mixture is simmering, chop up the peaches into smaller pieces and add them into the stock pot. Bring mixture back up to a boiling and then remove from heat. Stir in the box of orange flavored gelatin until it is dissolved. Ladle the mixture into clean freezer containers and let the mixture cool completely. Once at room temperature, place lid on container and label them with an expiration date of 9 months. Freeze.
