Grandma's Delicious Goldenrod Cake Recipe

Here is a recipe that I got from my grandmother back in the late 1970's to make her Goldenrod Dessert Cake. You will need a bundt pan (or tube pan) to make this cake. Once it is baked you can frost it with your favorite vanilla, chocolate or buttercream frosting recipe.

If you don't have a bundt pan you can bake it in a large rectangular cake pan and just "swirl" the two batters together.

Grandma's Goldenrod Cake Recipe

Batter #1:

1/2 cup shortening
3/4 cup granulated sugar
3 large egg yolks
1 3/4 cups all-purpose flour
2 teaspoons baking powder
1/4 teaspoon salt
1/2 cup milk
1 teaspoon vanilla extract

Cream together the shortening with the sugar, stir in the egg yolks and beat with an electric mixer for one minute. Sift together the flour, baking powder and salt. Add alternately with milk to the creamed mixture. Stir in the vanilla extract and set aside. Prepare batter #2 (below).

Batter #2:

3 large egg whites
3/4 cup granulated sugar
1/2 cup shortening
1/2 cup milk
1 3/4 cups all-purpose flour
2 teaspoon baking soda
1/2 teaspoon salt
1/2 teaspoon almond extract

Beat egg whites until stiff and then gradually stir in 1/4 cup of sugar, beating with an electric mixer. Cream together the shortening and remaining sugar. Sift together the flour, baking powder and salt. Add alternately with milk to the creamed mixture. Fold in the egg whites and almond extract until batter is well mixed.

Pour batters by alternate spoonfuls into a greased 9" tube pan. Bake in a preheated 350 degree oven for 40-50 minutes or until cake is done. Remove from oven and let cake cool for 10 minutes in the pan and then remove it and place on a wire rack to finish cooling. Once cool you can frost it with your favorite vanilla or butter cream frosting.
