Here is another great vintage recipe from the early 1970's that I got from my great aunt. This is her recipe for blueberry muffins and they are made with fresh (not frozen) blueberries. This recipe will make 14-15 muffins. (see notes below before starting).
Old-Fashioned Blueberry Sally Lunn Muffins Recipe
1/2 cup shortening
1/2 cup granulated sugar
2 large eggs
1 3/4 cups all-purpose flour
3 teaspoons baking powder
1/2 teaspoon salt
1 cup milk
2/3 cup fresh blueberries
1/4 cup brown sugar
1/2 teaspoon ground cinnamon
In a large mixing bowl cream together the shortening and the sugar. Beat the eggs into the bowl, one at a time. In another bowl sift together the flour, baking powder and salt; add alternately with milk to the creamed mixture. Carefully fold in the fresh blueberries.
Pour the muffin batter into a greased 8x8" baking dish. Mix the brown sugar and cinnamon together and sprinkle this mixture on top. Bake in a 350 degree oven for 35-40 minutes or until done. Serve warm.
Note: You can also pour the batter into a muffin cup baking pan like I did and then use a teaspoon to drizzle the brown sugar & cinnamon mixture on top of each muffin before baking.
