Delicious Stuffed Italian Chicken Breasts Recipe

Today I thought I would share a recipe with all of you that was given to me about 10 years ago by my mother-in-law and it happens to be one of my husband's favorite recipes. It is pretty easy to make and you only need a handful of ingredients to make it.

Stuffed Italian Chicken Breasts Recipe

4 large boneless, skinless chicken breasts
2 (4 ounce) Mozzarella balls
3-4 tablespoons sundried tomato sauce
2 tablespoons olive oil
1 1/4 teaspoons dried Oregano

Cut the chicken breasts in half so that you have a total of 8 pieces of chicken. Cut a horizontal pocket into each piece of chicken using a sharp chef knife. Slice the Mozzarella cheese into even slices. Place one slice of cheese into each piece of chicken followed by a teaspoon of tomato sauce. If needed, fasten the chicken pocket shut with some toothpicks or metal skewers. Sprinkle some dried Oregano on top of the chicken breast.

Place 2 tablespoons of olive oil in a large frying pan and bring it up to temperature, place chicken pieces into the hot oil and saute them for 5 minutes on each side over medium to high heat. Once done, serve immediately.
