Vintage Pecan Pound Cake Recipe

Here is another great recipe from my great aunt who is 86 years old and has a massive collection of vintage recipes. This particular recipe is from the late 1960's and to this day...auntie continues to make this Pecan Pound Cake for family gatherings.

Vintage Pecan Pound Cake Recipe

1 cup shortening
1 1/2 cups granulated sugar
2 tablespoons milk
5 large eggs
2 cups all purpose flour
1/2 teaspoon baking powder
1 teaspoon salt
3/4 cup of finely chopped pecans
2 teaspoons lemon juice (fresh)
1 teaspoon grated lemon rind

In a large mixing bowl cream together the shortening and granulated sugar; stir in the milk until all ingredients are well combined. Add in the eggs, one at a time, beating after each addition for 20 seconds. In another large mixing bowl sift together the all-purpose flour, baking powder and salt. Stir the flour mixture into the creamed mixture and stir until all ingredients are well combined. Stir in the chopped pecans, lemon juice and grated lemon rind.

Pour the batter into a well greased 9" round bundt pan (tube pan). Bake in a preheated 350 degree oven for 1 hour or until done.
