Healthy Pumpkin Raisin Oatmeal Muffins Recipe

If you are looking for a great recipe for pumpkin flavored muffins then I would suggest you try this one as it utilizes oatmeal as one of it's ingredients and we all know how healthy oatmeal is. If you are not a big fan of oatmeal this is a great way to incorporate some into your diet.

Pumpkin Raisin Oatmeal Muffins Recipe

1 1/2 cups all-purpose flour
3/4 cup packed light brown sugar
1 tbsp. baking powder
1 1/2 tsp. pumpkin pie spice
1 cup quick oats
1/2 tsp. baking soda
1/2 cup plump and juicy raisins
1 cup canned pumpkin puree
1/3 cup vegetable oil
3/4 cup milk (we use low-fat milk)
1 large egg, beaten well

Preheat oven to 400 degrees, line a 12 cup muffin pan with paper liners or lightly grease the inside of your muffin pan.

Combine all of the dry ingredients in a large bowl. In a medium bowl, combine pumpkin, milk, oil and eggs blending well. Stir pumpkin mixture into dry ingredients until just moist. Gently stir in the raisins until they are well combined in the batter. Fill muffin cups 2/3 of the way full and bake for 15-18 minutes or until done.
