Bisquick Ultimate Cheesy Chicken Fingers or Chicken Breasts Recipe

Today I am sharing with all of you a fabulous recipe from the great folks who make Bisquick Baking Mix. The recipe is called Ultimate Chicken Fingers (we call it Ultimate Cheesy Chicken Fingers) and is printed on the back of the Bisquick Baking Mix box. It is really delicious and my family just loves it! You only need a few ingredients to make it. This recipe makes 4 hearty servings.

Ultimate Cheesy Chicken Fingers Recipe

3 boneless skinless chicken breasts, cut into 1/2" strips
2/3 cup Original Bisquick mix
1/2 cup grated Parmesan cheese, shredded or grated
1/2 teaspoon salt or garlic salt
1/2 teaspoon paprika
1 large egg, slightly beaten
3 tablespoons butter, melted

(note: we replaced the Parmesan cheese with 1/4 cup Italian Blend Cheese + 1/4 cup Parmesan Cheese - mix them together). In addition, we don't cut our chicken breasts into strips.

Preheat the oven to 450 degrees F. Line a cookie sheet with foil; spray with cooking spray. In a 1-gallon resealable food-storage plastic bag, mix the Bisquick baking mix, cheese, salt and paprika.

In a small bowl, beat the egg. Dip each chicken strip into the egg mixture and then place the strips into the plastic bag. Zip it close and shake it up so that the chicken gets well coated. Place the coated chicken strips onto your baking sheet. Drizzle the melted butter over the top.
Place the baking sheet into a 450 degree F oven and bake for 12-14 minutes, turning halfway through the baking cycle. If you are baking full chicken breasts like we do, the baking time will be longer...we bake for 45 minutes, flipping halfway through the baking cycle. Once done, remove from the oven and let cool for a few minutes before serving. DELICIOUS!
