Chocolate Nut Raisin Muffins Recipe Made with a Microwave Oven!

I got this recipe several years ago from my sister-in-law and it has been one of our favorite recipes for many years. If your kids are not big eaters of muffins, I think they would love this one because of the chocolate, nuts and raisins. I often make this muffin recipe when we are traveling in the RV or Camper as you make them by using a microwave oven.

Chocolate Nut Raisin Muffins Recipe

1 cup all-purpose flour
2/3 cup granulated sugar
1/4 cup cocoa powder
2 tsp. baking powder
1/2 tsp. salt
1/2 cup milk
1/4 cup vegetable oil
1 large egg, lightly beaten
1 cup plump and juicy raisins
1/2 cup chopped nuts

Combine dry ingredients in a large bowl, add milk, vegetable oil and egg, stir until just moistened. Fold in the raisins and chopped nuts. Fill paper muffin lined cups one-half full with batter and place in microwave cupcake or muffin baker. Microwave on high for 2 to 2 1/2 minutes, turning twice. Repeat with remaining batter until muffins are done. Adjust microwaving time according to your microwave so watch them closely. Serve warm.
