Chocolate Oatmeal No Bake Stove Top Cookies Recipe

Now that it is heating up outside, I look for recipes that I can make on my stove top and this no-bake chocolate oatmeal cookies is one that I make often during the summer months. It is best to have all of your ingredients measured out as this process goes along really quickly and once you dump in the last set of ingredients, the cookie batter starts hardening up quickly. Here is the recipe!

Chocolate Oatmeal No Bake Stove Top Cookies

2 cups granulated sugar
1/2 cup milk
1/4 cup cocoa powder
1/2 cup butter or margarine
2 1/2 cups quick cooking oatmeal
1/2 cup creamy peanut butter
1 teaspoon vanilla extract
In a large saucepan combine together the granulated sugar, milk, cocoa powder and butter. Bring mixture up to a boil and boil for one minute, stirring constantly.

Turn off the heat. Stir in the quick cooking oatmeal, creamy peanut butter and vanilla extract. Keep stirring until all ingredients are well-combined and the peanut butter has melted.


Lay down wax paper or a nonstick silicone baking mat. Drop cookies by the tablespoon onto the paper or nonstick baking mat. Let them cool for one hour and then place them into an airtight container. Will keep for up to one week.
