Toffee Bit Chocolate Brownie Cookies Recipe

A few weeks ago I needed to bake a batch of cookies for my hubby to take into his office for an afternoon office meeting they were having. He asked me to make something different so I asked my auntie for a few cookie recipes and she gave me this one. Everyone at my hubby's office raved and raved about these cookies so I thought I would share the recipe with all of you today. This recipe will make approximately 30 cookies.

Toffee Bit Chocolate Brownie Cookies Recipe

2 sticks butter, softened
4 oz. unsweetened chocolate, finely chopped
1 1/2 cups granulated sugar
2 large eggs
1 tablespoon vanilla extract
3 cups all-purpose flour
1/2 teaspoon salt
1 1/2 cups chocolate-covered toffee candy bars, finely chopped

In a large saucepan melt the butter over low heat, stirring constantly to prevent scorching. (or you can do this in your microwave at 20 second intervals in a microwave safe bowl). Stir the granulated sugar into the melted butter until smooth. Stir in the eggs, one at a time and then stir in the vanilla extract until all ingredients are well combined. Gradually stir in the all-purpose flour and the salt, mix batter until well combined. Fold in the chopped up toffee candy until well combined.

Preheat oven to 350 degrees F. and drop the cookie batter onto an ungreased baking sheet, by the tablespoonful, leaving about 2" apart (they will expand a little bit during the baking process). Bake in the oven for approximately 10-11 minutes or until done. Remove baking sheet from oven and transfer the cookies to a wire rack to cool. Store them in an airtight container. These cookies also freeze well after they have been baked and cooled.
