Homemade Cherry Bonbons Recipe

My husband LOVES cherries and a few days ago, I made some homemade cherry bonbons for him. I had never made this recipe before, but apparently his mother has been making it for years. It is her recipe and I am sharing it with all of you today.

Cherry Bonbons Recipe

3 tbsp. butter, softened
1/4 cup evaporated milk
1 tsp. vanilla extract
1/4 tsp. salt
3 1/2 cups confectioner's sugar
1/3 cup peanuts, finely chopped
1/3 cup candied cherries, finely chopped

In a large saucepan, melt the butter over low heat; stir in the milk, vanilla extract and salt. Gradually stir in the confectioners sugar and simmer for one minute. Remove from heat. Turn out the mixture onto a dough board covered with confectioner's sugar; work the mixture until smooth. add in the chopped nuts and chopped candied cherries. Shape the dough into two rolls about 15" in length. Wrap rolls in waxed paper and chill in the refrigerator until firm. (about 2 1/2 hours). Remove from refrigerator and cut into slices that measure a 1/2" thick. Store in an airtight container. Makes approximately 4 1/2 dozen.
