Homemade Pecan Puffs Cookies Recipe

My husband absolutely loves pecans...matter of fact, they are his second favorite nut right after the salted cashew. When I get into the cookie baking mood, he always asks me to whip up a batch of homemade pecan puffs cookies for him. Yummy!

Pecan Puffs Cookies Recipe

2 sticks butter, softened
2 cups cake flour, lightly sifted
4 tablespoons granulated sugar
1 teaspoon vanilla extract
1/2 cup pecans, finely chopped
1 lb. confectioner's sugar

In a large mixing bowl, beat together the butter with the vanilla and granulated sugar. Alternately add in the cake flour and chopped pecans until well blended. Roll cookie dough into small balls and place them onto a baking sheet.

Preheat oven to 300 degrees F. Place baking sheet into the oven and bake for 35 to 40 minutes or until done. Remove and let balls cool. Roll balls into confectioner's sugar and then store them in an airtight container.
