Monterey Jack Chicken Fajitas Recipe

I love to make homemade Mexican food for my family and one of the things we really enjoy making and eating are delicious Chicken Fajitas! When I make this recipe, I double up on all of my ingredients (so double the ingredients list below, if desired) and make a big batch. They are great for lunch the next day, just reheat in the microwave and serve!

Monterey Jack Chicken Fajitas Recipe

1 pkg. frozen Fajita Chicken Strips (9 ounce sized package)
1 can cream of mushroom soup
1/2 cup salsa
1 tbsp. vegetable oil
1 green pepper, cut into strips
1 onion, sliced
6 flour tortillas
1 cup shredded Monterey Jack Cheese

In a large skillet, heat oil. Add pepper and onion and cook until tender crisp. Add chicken, soup and salsa. Cover and heat through. Spoon about 1/2 cup chicken mixture down center of each tortilla. Top with cheese and additional salsa. Fold flour tortilla around filling. Serve immediately.
