Baked Parmesan Fish Fillets Recipe

Are you trying to incorporate more fish into your diet? If so, I have a quick and easy fish recipe for all of you today. I got this recipe from my sister last year and since that time, it has become a big hit here in our home.

You can use whatever fish you like, we sometimes make it with cod, haddock or even catfish, depending on what I have on hand.

Baked Parmesan Fish Fillets Recipe

1 cup cornflake cereal (crushed)
3/4 cup grated Parmesan cheese
1/2 tsp. salt
2 lbs. fish fillets
2 large eggs, slightly beaten
2 tbsp. milk

Combine the cornflake crumbs with the grated cheese and salt. In a small bowl, slightly beat together the eggs and milk. Dip the fish fillets into the egg & milk mixture and then roll them into the crushed cornflakes & cheese mixture.

Preheat oven to 350 degrees F. Lightly grease a baking dish and lay the prepared fish fillets into the bottom of the dish, in a single layer. Bake for 22 to 27 minutes or until the fish is done. Remove immediately and serve warm.
