Delicious Homemade Zucchini Casserole Recipe

Our Zucchini did really well in our backyard garden this year and we have been enjoying all kinds of new recipes that utilize fresh Zucchini as the main ingredient. This homemade zucchini casserole is one that our entire family enjoys and when I make it...I make 2 and 3 at a time and freeze the duplicates for later use.

Homemade Zucchini Casserole Recipe

1 large zucchini, sliced and peel removed
2 large tomatoes, peeled and sliced
1 medium onion, finely chopped
cheddar cheese, shredded
seasoned dried bread crumbs

note: no amounts given for the cheddar cheese, butter and seasoned bread crumbs as I just toss those in according to our own taste buds and the amount that we prefer to use. Feel free to do the same!

Light spray the bottom of a glass casserole baking dish with nonstick cooking spray. Preheat oven to 350 degrees F. Combine all of the above ingredients in the casserole dish until well combined. Place dish into the oven and bake for 30 to 35 minutes or until done. Remove & serve immediately.
