Home Canning Pickled Peppers Recipe


Peppers are finally in-season again here in Pennsylvania and when we grow peppers, we grow a lot of them! That is one veggie that does extremely well in a backyard garden, including ours!

Today I am sharing with all of you who enjoy home canning one of my favorite pickled peppers canning recipes. If you are familiar with home canning, this recipe is fairly simple to prepare. Enjoy!

Pickled Peppers Recipe for Home Canning

9 large green bell peppers, chopped
2 chili peppers, finely chopped
2 1/2 cups regular vinegar
2 1/2 cups water
1 1/2 cups granulated sugar
2 teaspoons salt

Clean the peppers, remove the stems and seeds and chop them up. Heat up 5-8 cups of boiling hot water. Place peppers into the hot water, turn of the heat and let them sit in the hot water for 5 minutes. In a separate saucepan combine together the vinegar, 2 1/2 cups of water, granulated sugar and salt. Simmer this mixture for 5 minutes. Drain water from peppers in the other pan. Pack the soaked peppers into hot sterilized canning jars. Pour the sugar mixture (hot) into the jars with the peppers, filling the jar up to within 1" from the top. Seal jars. Place them into a water bath canner and process for 7 minutes. Remove and let cool.
