Jalapeno Baked Mashed Potatoes Recipe


We love mashed potatoes and make mashed potatoes at least once a week to go alongside our main dish at dinner. With that said...we like to mix it up from time to time and try something a little different when it comes to our mashed potatoes.

A few years ago I got this recipe from my great uncle who loves peppers and spicy foods. When you make these mashed potatoes...there is some light heat to them...but nothing really overly spicy at all. Sometimes we substitute the jalapeno peppers with some green bell peppers...so use whatever kind of peppers that you prefer.

Jalapeno Baked Mashed Potatoes Recipe


3 large russet potatoes, peeled and cubed into 2" chunks
4 tbsp. milk
1/4 cup feta cheese
3 tbsp. finely chopped onions
3 tbsp. finely chopped jalapeno peppers
1 small clove garlic, minced
1 tbsp. butter, softened
1 tsp. salt
1/2 to 3/4 tsp. ground black pepper
1/3 cup shredded cheddar cheese

Cook potatoes in boiling water until fork tender, drain water and place them into a mixing bowl. Using an electric mixer, beat in the milk, feta cheese, chopped onions, chopped jalapeno's, minced garlic, butter, salt and ground black pepper until smooth.

Transfer the potato mixture to a 3 quart baking dish. Sprinkle cheddar cheese on top and bake in a preheated 350 degree oven for 12 to 15 minutes, or until done. Serve immediately.
