Homemade Bacon, Egg and Cheese Breakfast Sandwiches Recipe - Once A Month Cooking!

I love reading blogs and lately, I have been really into freezer cooking and doing a lot of my family's meals on Sundays to last us for a full three weeks. I will prepare a lot of our breakfasts, lunches and dinners ahead of time and freeze them for later use.

One of my favorite mom blogs online happens to be Must Have Mom which is published by Sarah. I have been reading and visiting her blog for over 3 years now. She has been doing a big segment lately on Freezer Cooking and I grabbed one of her ideas and recipes for making Freezer Breakfast Sandwiches. You can go over to her blog and read her post and print out the recipe.

I made mine similar to hers except I purchased a microwave scrambled egg cooker to speed up the process. I found mine at my local kitchen shop for $3.50 and love it! It makes the perfect sized scrambled eggs to put in your bagel and English muffin breakfast sandwiches. I was a little worried they would be under-cooked or come out rubbery but they came out of there perfectly! You can see it on the right in my photo above.

As Sarah recommends it is best to work in an assembly line fashion and have everything out and ready. You don't want to be digging around and searching for what you need. We made half of ours on lightly toasted English Muffins and the other half on lightly toasted Bagels.

Last Sunday I made up 24 breakfast sandwiches and froze them for later use. Already this past week we have eaten 4 of them because they are super good. Like Sarah stated, I wrapped each one in a paper towel and then placed them into freezer bags. I grouped four sandwiches per bag and then labeled them with what they were and how to reheat the breakfast sandwiches in the microwave. Her cheese slice tip works fantastic for these.
