Spicy Red Pepper Relish Recipe
2 small red bell peppers, finely chopped
1 small red chili pepper, finely chopped
1 small onion, finely chopped
1/2 cup granulated sugar
1/2 cup vinegar
1-2 teaspoons hot sauce
Directions: In a large saucepan combine together all of the above ingredients in the order they are given in the recipe. Simmer this mixture over medium heat for 15 to 17 minutes, stirring often to prevent sticking. If needed, you can add more moisture to the mixture by adding additional vinegar or water.
Once it is done simmering (it will reduce in size by 10 to 15%), remove from heat and let cool to room temperature. Place mixture into a bowl, cover and refrigerate until ready to use.
