Colman's Mustard and Mustard Mac & Cheese Recipe

Here in our home...we use quite a bit of mustard! We use it as a standard condiment when eating sandwiches, hot dogs, cheeseburgers, etc. With that said, we also use a lot of mustard as an ingredient when whipping up some delicious homemade potato salad, macaroni salad, egg salad and of course...deviled eggs!

Colman's is one of America's most iconic mustard. Right now the company is celebrating its 200th birthday. Just 38 years after the signing of America's most distinguished document (The Declaration of Independence), Colman's Mustard was born.

Recently I was sent some Colman's Mustard to review for all of you and I decided to try it out in one of our favorite deviled eggs recipe. I used the prepared mustard in my particular recipe but you could use their dry mustard if you wanted to.
One of the things I instantly loved about this mustard is that it has the perfect consistency. It isn't too thick like a paste and it isn't runny like water. Just perfect! Next, I love the flavor and texture of this mustard. It works great as an ingredient in a recipe or as a condiment on your favorite sandwich. Smooth texture that is full of fantastic flavor!!!

Colman's Mustard Mac and Cheese Recipe

1/4 C unsalted butter
1/3 C flour
3 cups milk
8 oz Gruyere grated (some extra for sprinkling on top)
6 oz cheddar grated (some extra for sprinkling on top)
2 ounces Monterey Jack grated
1/2 tsp kosher salt
1/4 tsp chipotle chili powder
1/2 tsp mustard powder
1/8 tsp garlic powder
2 lbs penne slightly under cooked by 2 minutes

Butter an 8x13 baking dish (or smaller individual dishes). Preheat the oven to 350 degrees. Melt the butter and whisk in the flour. Add the milk and cook until the sauce thickens, stirring frequently. Remove from heat, slowly add the cheese, stirring well. Then add the salt, chili powder, mustard and garlic powder. Stir well. Mix the sauce with the under cooked penne, pour into the prepared pan. Sprinkle the cheeses over the top along with a bit of the chipotle powder for some color. Bake for 15 mins and serve.
